I love Cajun, but I don't really think there is any really good Cajun here in Texas, except close to LA. There sure isn't any here in the north hill country.

Yeah, and steaks. But the ribs here in town aren't tender. I like ribs that almost melt in your mouth.

there is a cajun restaurant here, and it is pretty good. I have made way better jambalaya, and gumbo...but I am so bad about not following a recipe...just cooking as I go, so I fail a lot.

I made some awesome gumbo about 3 times...then the last 2 times I failed so bad I haven`t wanted it since!

it's all in the roux my friend, that's why it's so hard to make it consistently good. I found some stuff locally that is perfect, just the right color & forehead sweating spicy. You're gonna love the name and I swear this is a real product. it's called "Slap Yo Mama" they also make a good etouffee sauce for when I'm feeling lazy

me too! There was an awesome place here....I ate there for almost a year....and then their ribs just sucked....I don`t know what the hell happened. I make better ribs in the oven than they have :-(

I was pretty consistant with the roux....always got it to a chocolate color.....I think I was screwing up everything else with my none recipe ways.

That's all I used to use was propane. About 4 years ago I got a charcoal smoker. It's been a hot and heavy love affair ever since.

I'm helping a customer who is asking how moth balls work. (dumbass) his kid runs over to me and tries to grab my cell phone on my belt. I laugh, and just gently guide him away.

His dad gets pissed and reports me to the manager on duty, saying I pushed him. I get called in to fill out a statement. Turns out the kid is autistic and had been grabbing people all over the store. Even blew his nose on one of our people's shirts.

I should have just punched the kids dad instead. Fuckstain!
