charcoal was always a nightmare for me..no heat control....burn out before i was done...just not good.

With the gas I can control all of that, and get my smoke too...gas is way better for me.

One of the best thuings ever....put some kind of rub on a whole chicken, cut it`s back bone out so it lays flat, and grill the fuck right out of it......

I'm not a grill snob, what ever works for you is what's best. I just love old school fire. And for smoking, you just throw another log on if it needs it.

I'm going to have to check that out, my mom used to do bread & butter& dill pickles but she was using the canning method. suckers were good too, in grade school I could trade those things off for the other guys entire lunches :nod:
I don`t know if it works for the bread and butter pickles...I want to say those have to be canned...but for dill pickles...the old fermented way is awesome!

You can google it for a recipe....it is stupid easy....just throw in some oak, grape, or cherry leaves, whether the ricipe you follow says to or not.

I agree...do whatever works best. I get all the smokiness from the wood scrapes I put in the smoke box.

thought it was Federal that you're full time if you go over 30 hours? I know Firestone was absolutely paranoid about that one, they required the managers to only schedule part timers for 25 hours

They can work you x number of weeks over 30 before they have to make you full time.

Homer will take everyone right up to the limit and then start cutting your hours.

I agree...do whatever works best. I get all the smokiness from the wood scrapes I put in the smoke box.

I used to have a cast iron box to put wood chips in for my gas grill. Soak the chips in water a few hours, put them in the box, and you would swear it was a wood fire. As far as ease of use, you can't beat gas.

I can go out and scrounge mesquite within 5 miles of my house.

It's pretty invasive certain places I go there, so they pretty much let me have free reign to take whatever I want. Last time I was out there a group of us went on a feral pig hunt. One of the pigs was pregnant, some local kid cut open the stomach pulled out the babies and snapped their necks.

The rest of the time they were driving around "hunting" I spent puking and gathering wood for my smoker.

Yeah, and steaks. But the ribs here in town aren't tender. I like ribs that almost melt in your mouth.

best ribs I've ever had was at a local joint in either Kansas City or St. Louis but I don't remember what the name of it was nor do I remember where exactly either since it was 6 or so years ago. but Missouri really knows how to make ribs

you know why there shut down? I really enjoyed the place and they had amazing lobster and crab. Red Lobster is really good, but I always thought Joe's Crabshack was a lot better. I've never been really big on real spicy food because it always burned my lips real bad and made them feel like they were on fire even though my mouth didn't feel like that, but I've seemed to enjoy spicy food as of recently. not sure if my taste buds have gotten accustomed to it as I've gotten older or what

when's Jazz Fest? but I'll come down whenever I get enough money to afford it

Mardi Gras kinda floats depending on when Easter is, it's always the 2 weekends prior to Ash Wednesday
as far as the Super Krewe's parades and that's when all of the crowds are in town
Jazz Fest is always the last weekend in April and the first weekend in May/ first weekend is Fri-Sun, 2nd weekend is Thur-Sunday

I don`t bother soaking them, but ya, that is basically what i do....and I get more smoke like that than I would with a wood fire.

I want to do ribs in the oven...then finish them off on the grill....I think that would be awesome!

Feral hogs are really a problem down here, like most of the south now. And yeah, except for grilling, mesquite can be a real nuisance. And that shit is hard as a rock. It will eat up saw blades and chains in no time.

I have always lifted weights and stayed in shape...since i was 10 or so...I made me first set of weights out of chunks of firewood and a pipe i found, haha!

I've never lifted weights really or stayed in shape. I'm still dumbfounded on how I lost a bunch of weight and got thin. people tell me it was from the drugs, but I didn't do enough in order for it to effect me like that. most people gain 15+ lbs in college, I lost 100.

While the government helps them with the rules. I'm thinking of inviting the union in right before I quit. They are so paranoid of unions. They spend about an hour of a 6 hour orientation trying to scare you about unions.

I guess they are here in Missouri too...though i have never seen any around here, but it is leagal to shoot the fuckers on site any time of the year...no liecence needed...just do some killing!

Apple juice in a spray bottle, give 'em a spray once an hour or so. Seems to keep the moisture in nicely and add help draw in the smoke.

Mardi Gras I've always wanted to go to. I've heard it's crazy there and several people I've talked to who went said it was some of the best times of their life, you just have to be careful where you go and what streets you end up on.

never been a fan of Jazz music so I'm not sure how Jazz Fest would go with me, but I should definitely try to come down for a weekend of that at some point just for the experience

How I make them in the oven is wrapped in foil, with a liquid, so they are brasing, super tender! I want to do them like that then finish on the grill to get that smoke in them.
