I use an apple/hickory mix or pure apple for pork. Hickory for beef, but I've never done a brisket. It's just too much food for only 3 of us.

And yeah I wrap, I don't care if people call it a crutch or whatever. You can have your pride, I'll take my delicious dinner.

Ingredients
  1. 1 quart mayonnaise.
  2. 3/4 quart apple cider vinegar.
  3. 1/2 cup corn syrup.
  4. 1/4 tablespoon cayenne pepper.
  5. Prepared horseradish.
  6. Lemon juice.
  7. Salt and freshly ground black pepper.

Someday I might try to make my own BBQ sauce. I like the thick sugary/molasses type though, and it has to be caramelized on the meat. I can't dip or just throw it on there at the end without cooking it in.

I've been messing with rubs lately though.

Massie's books are class. Crazy to think I have a degree in Russian literature and we were required to read some of his works.


My grandparents were from Russia. I went there last summer for the first time. The people are friendly but don't get mixed up with the govt. They are real sons of bitches. Food was good.
