Looks like it is coming down to a sign and trade with Gasol going to Bulls for just picks.
Now the deal fell through and Gasol walks and we get nothing. Lakers wanted 2 first rounders, Bulls said no and offered one which would have ventureed close to the second round so it wasn't worth it.

Lakers refused to do a S&T because the Bulls offered just 1 first rounder which as you said would be towards the back of the first round

What I don't understand from the Lakers perspective is their unwillingness to do the S&T. It doesn't harm them in any way from my understanding and any draft picks - even late first round - is desirable.
Even if the FO doesn't think it is worth it now they don't have Gasol and received nothing for him. At least stockpile the draft pick and who knows they might be able to package a couple of draft picks to move up.

Agreed. Something is better than nothing. We had 0 bargaining power here. Pau did not have to do a sign and trade and the fact that it was offered was a courtesy to us. So, then we go and overplay our hand and get nothing. We could have gone into next year with 2 first round picks. We could have used those picks to do a sign and trade, or to move up in the draft, etc... But instead we just take nothing for Pau.
Not a big deal. The Lakers wanted 2 picks, the Bulls only wanted to part with one. The Lakers would likely have had to take back a player (probably Boozer) that they can still get if and when he gets amnestied.
The only one who lost anything was Pau who had to sign for less money than if they did the S&T.
