I love seafood but always said I didn't care for octopus. Then I went to an Italian restaurant and the waiter told me I didn't like it because I had never had it done right. Deep-fried, battered octopus is bullshit. He told me to try theirs and if I didn't like it I didn't have to pay. I tried it and it is in my top seafood dishes now.

How did they prepare it there? I know if it isn't cooked just right, it is very chewy. But when it is done right, it is just awesome!

ONLY way I can handle octopus is...ceviche style or pound it into submission.

Gotta be as fresh as possible for ceviche. Cant say I have ever had fresh octopus. Always frozen. Ceviche with octopus and conch would be so good to eat when it is hot as hell outside.

Both. My parents went to Tarpon Springs awhile back and they both had whole octopi (a pound or so each) that had just been grilled over hot coals and spritzed with lemon. Now I'm desperate to head down there and try some!
