Philly cheesesteaks are kind of overrated. But Philly does have a lot of good food, including a lot of good Italian American food.

All cities have good food. American food for me is a great cheeseburger, or steak & fries, or regional seafood when in season.

And the regional sandwiches, all states have their version of a sandwich. Some are very good.

In search of the perfect hamburger. Have tried them in many countries, everywhere you go. The perfect hamburger is elusive but will be found time and time again.

In what cities have you faced the best hamburger. For me, in a half-ass Miami marina, NYC, and maybe somewhere in California?

at my parents house

I'm simple for that though; nice thick patty off the grill with minimal fixings.

If your entire sandwich relies on the bread it's not a very good sandwich.
Good, fresh (can't really be shipped far) bread can make a bad sandwich good and a good sandwich life changing. You also can't recreate it elsewhere without the water, etc like pizza. My issue remains the cheese whiz, that's just bull shit. If I ever go again I'll do the provolone

Are we sure using Philly water is a good thing? Or just a familiar taste for the locals?

Agree, bread is crucial for the sandwich. When it’s bad the sandwich will fall apart or not taste as good as it should. This is especially true for pastrami sandwich, it needs to be jewish deli rye bread. You can buy it in NYC or make at home, but difficult to get the exact texture, taste, etc.

Not to mention the meat for pastrami. Not the store bought processed crap. The good stuff uses like 20 spices, brisket put in brine solution for about 1 week (cold storage) and slow smoke cooked for hours.

And the meat! I’ve tried so many blends to get the perfect taste and texture. Have not found it yet. Usually go for basic chuck (lol) 80-20, buy a nice slab and put through the grinder once, at home the same day you are making the burger.

I'm not patient enough to grind my own, but would like to try 75-25 or a blend with ground pork belly

Pork belly is good, basically sophisticated bacon. But it interferes if you’re looking for the 100% beef taste.

Rye bread is for people who like to lick buttholes. They're trying to get the taste of butthole out of their mouth.

I will take your word on that. For the record, a real pastrami on rye sandwich with some mustard from a new york deli is fucking divine.

Dallas has become a laughing stock by their own doing. Can't believe they just did that to their franchise quarterback, but of course they did. They're the cowboys.

Quincy Carter to Trey Lance. Romo on tv as a clown. Aikman on tv as a reminder of what they once were. Jason Garrett to Mike McCarthy. Wade Phillips was a Boob, but the best they had and they cut bait on him because of the playoffs, playoffs, playoffs where they can't win.

Sad, and mostly funny.
