That's awesome. One thing I miss about back home is my cousin makes mild Hungarian sausage every summer. I miss it.
I've got to fine tune this recipe. These needed more coriander. I should get a pestle and mortar so I can toast the seeds, and crush them instead of using the ground coriander from the store

They tasted good. Just need to improve a bit in spots. It wasn't really that difficult, though, and if you work with ground meats, all you need is a stuffer... And to go to a butcher shop for casings. Most grocery stores don't have them.

Sausage making is a constant tweaking of spices. Every winter, after all the hunting is done, I do a freezer cleanout and make sausage of the meat I didn't eat from the year prior. I've done a lot of different kinds and really enjoy the process.

Tremendous, I have a friend that goes tuna fishing and we eat fresh rolls as soon as they catch one.....We go to a local place that makes great sushi rice and buy it from them.....so much easier and better....,
It really doesn't take that much work if you're doing simple rolls. Just did tuna, cucumber, cream cheese, and broccoli sprouts.

I've got this plastic clamshell contraption.... Just load it up, squeeze it out
