Beef short ribs?
Yup. I prefer them uncut and untrimmed but this is what they had. Local farm at farmers market they I always buy from.

Mom runs the counter
Dad fills the order
Their ~8 year old daughter charms them

How long do you smoke them?

Extended family is currently discussing what do have for July 4th BBQ. Mom wants ribs. Wife wants beef ribs, decided she doesn't want pork anymore. Sister/Mom say they don't like beef ribs. WTF?

Of course, I'm the one responsible for making them. Maybe both? They want to use Dad's sauce which is great, and also sentimentalize about how he used to make them. He boiled them and then finished them in the oven. They were fair, not really great. I'm afraid to tell them how I usually cook them.

I've had excellent results braising them in the slow cooker and finishing them under an over broiler.

It depends on size thickness, but 5-6 hours at 250-275.

If you cook in 225-250 range 6-8

Also depends if you wrap, I didn't, but you can shave off time and make them more tender but sacrifice bark. If I make for others I tend to wrap at about 3 hour mark

Tender ribs take a long time, no matter what method you use.
In my early 20s I made pork whole spares at family cabin. I didn't adjust for being whole spares and didn't know what I was doing and made some ribs akin to shoe leather.

People were polite, but I knew I screwed up. They needed at least another 90 minutes if not more

Just a skosh overdone in the pan after the smoker... the price you sometimes pay for hunting that perfectly seared surface!

Anyone have tips on ripening a papaya. Everytime i buy one its not quite ripe.

i know they say stick it in a paper bag give it 1-2 days. Put an apple or banana in there to kick it into hyperdrive. Put it by a window to accelerate it. That 1-2 days and its way ripe.

yeah i dunno i always do this and can leave them in there for like 4-5-6-7 days and rhey arent turning super ripe. Some of the ones i put in have semi yellow/orange rind. Its not like they are completely immature.

i love papaya, but end up wasting it when i buy it quite often.

Gonna do smashburgers this weekend.
