I'm thinking meatloaf and mashed taters. Great for sammiches tomorrow too.
I do have plenty of eggs tho. I bought eight 18 packs the other day to pickle for fishing trips this spring/summer.

this is a good idea. You got a recipe you can shoot me. I'd rather use something tried and true than experiment with recipes out of canning books that i am unsure of.
Peeling 144 eggs is a mofo, but I give a few jars away to my buds as long as they give the jar back for next year. No jar return, no eggs next year.
Make your pickled eggs around Easter or Thanksgiving because they are usually on sale to lure you into the grocery store those times.
you make these in quart jars?
