I'm thinking meatloaf and mashed taters. Great for sammiches tomorrow too.

I do have plenty of eggs tho. I bought eight 18 packs the other day to pickle for fishing trips this spring/summer.

this is a good idea. You got a recipe you can shoot me. I'd rather use something tried and true than experiment with recipes out of canning books that i am unsure of.

this is a good idea. You got a recipe you can shoot me. I'd rather use something tried and true than experiment with recipes out of canning books that i am unsure of.

I put slices of smoked sausage in my jars as well, but pretty simple.

Make a brine in a stock pot depending how many eggs you plan to pickle.

For 36 eggs..

Boil
4 cups Cider Vinegar
2 cups White Vinegar
1 cup water
1 Tbs Kosher Salt
2 Tbs Mustard Seed
1 Tbs Coriander Seed
Let cool

In your mason jars

Layer to the top
Onion slices
Sausage slices
Whole Hard boiled (peeled) eggs.

Pour the brine to cover completely..Then add 1 teaspoon of crushed red pepper flakes.

Screw on the lid, shake, and refrigerate.
They'll be ready in a couple of weeks.

They don't need to be refrigerated for the trip though. The brine keeps them from spoiling.

Make your pickled eggs around Easter or Thanksgiving because they are usually on sale to lure you into the grocery store those times.

Fried up some bacon for breakfast and realized i didn't have any hash browns. Went with the Bacon/Egg/Pepperjack on an english muffin. Then i had 2 more.

I put a corned beef in the crockpot on my way out the door this morning. Gonna make ruebens tonight.

I actually bought 4 extra corned beefs to freeze, cause they is on sale en sech.
