God damn..... you just might be alright after all. I love the old lunch boxes from the 70's. I've considered a few times on collecting them even now. The smell of a new lunch box and thermos.... brings back the memories. I remember having some with the Super Friends....Scooby-Doo... NFL with the helmets on it.
This is to collect you really want the thermos too and that's a tough find

What will you do with your lunchboxes when you graduate?

Happy Friday Everyone: With it now being national BBQ month let's talk about BBQ and Grilling today. What's your favorite thing to cook in the great outdoors. What are something you do that might surprise people. What do you do as well or better than local restaurants. What's the one thing you are asked to cook by others you dislike cooking?

Favorite Thing To Cook: Smoked Rotisserie Chicken or Spare Ribs. Like the spares over the baby backs more bang for the buck.

Surprise Cooks. Smoked Devil Eggs seems to get them every time as does Grilled Watermelon.

Better The Restaurants: Steele Head Trout or Salmon

Thing That Annoys Me: Steaks. To many people want it to many different ways and I cannot tolerate that.

I like cooking lamb over an oak fire. shave off a chunk into a tortilla and take a swig of beer. On a beach of course.
My 2nd wife liked to say she married a man that cooked on a coat hanger on a bonfire. What was she thinking?
What she didn't mention was that she loved it!

Salmon is best cooked fresh out of the water on the bank. Throw the fish filets on a bed of green alder and when the alder burns it is done.

Real Santa Maria style barbecue wasn't done with tri-tip!

Better than restaurants? Everything.

I too am annoyed by steaks. My wife is handicapped and cannot eat a good steak.
My mother in law wants hers well done. Need I say more?

Let me add, Most restaurants cook like teachers teach. Teach to the dumbest students and leave the smart kids bored.
Restaurant food is so dumbed down it is pathetic. I have know personall some owners of some fine restaurants.
Many conversations started with, " why don't you..." and ended with, "yeah, well....."

There are 2 ways for me to cook a steak, Correctly or you do it yourself!
The best meals are cooked without instructions or requests from the guests.....
Geez I sound like an ass!
You actually don't. I'm tired of a world where everyone would rather "think they are right" than be right. In your case I'm referring to someone making a request for their ignorant standard than allow an "artist" to enlighten them...

A place has to be an absolutely top notch steakhouse or I won't even try. I know I can generally do better by myself. The GF actually is a damn good grill cook, too. If I'm out, I always order meat rare so I might have a prayer of getting it better than medium.

What's your favorite thing to cook in the great outdoors. Gourmet Burgers. Using or mixing protiens. Stuffing different cheeses or other things inside. The right bun makes a huge difference. Hard to find here in Thailand so have to improvise. Had a local baker make me some for my last party.
What are something you do that might surprise people. BBQ eggs. Reminds you of a hard boiled egg with a smokey flavor. Found on many street carts here in the land of smiles (kai bing).
What do you do as well or better than local restaurants. Some Thai food actually. Burgers for sure. The wife does an awesome cheesecake that both westerners and Thais love. They want her to open a shop.
What's the one thing you are asked to cook by others you dislike cooking? Nothing really. I enjoy cooking and like almost everything. If I had to say something, I would say
Miang Kham Is a Perfect Bite of Thai Food but an immense amount of prep work as everything needs to be cut very small.

Starts with betel leaves, in the states I substituted seasame leaf because it was easier to find. The sauce is the only thing cooked. It's an infused syrup made by cooking palm sugar with tamarind and fish sauce, lemongrass, ginger, and galangal and shredded toasted coconuct.

Miang kham items are usually ginger, galangal, dried shrimp, thai chillies, peanuts, lime, toasted shredded coconut and shallot.

Put a little of everything in the leaf, wrap it up and enjoy.

Oh and if you ever find Miang Kham chips, I strongly recommend you give them a try. By far mine and many friends favorite.

If you can share... I would love a good mac and cheese recipe. I've tried several from Pintrest and they just never hit the spot.
I have a recipe at home...I am at work...but sharp cheddar, I use Cabot because...well I grew up there and know people...Gouda Smoked or not), Gruyere, Parmesan, Fontina, 1 or two slices of Swiss, and another couple I cannot remember. I will look at my recipe later for flavors and quantities.
Make a good rue with some heavy cream and butter. Makes it nice and creamy so it flows into the elbows real good, but the swiss makes it just a little sticky and keeps it together better when eating.

Bacon. A pound. Cut it up into small 1/4" pieces then fry it up. mixt that into the cheese rue just before adding to the elbows.
Lobster. Get a tail or two frozen if you are not near the coast (like me) ant cut them into small pieces as well. If not, langostino lobster will do as well.

Mix with cheese and bacon and stir into noodles and bake for 30 minutes.
You can add crushed ritz crackers or crushed goldfish cracker to the top first if that's your thing too.

For less money!!!

Maybe even better quality meat and a larger cut for less money.

When I finally made the jump from gas to charcoal and wood, I also finally learned how to cook a steak. These people that will pay $50 for a 8 oz Prime Filet would be shocked at the size of an 8 oz Filet from a good butcher shop. and for $50 I can buy Two 8 oz Wagyu and still have $10 for a bag of Yukon Gold potatoes.

Buying prime filet is a waste of money unless you have false teeth!
