Offset smoker? Maybe it was closest to the heat?
Cabinet smoker, but it was the lower one. That may be it. Might have to put a heat sink on the bottom for the longer smokes.

I was one of the grillmasters as my daughter's wedding a few weeks back.

Burgers, Italian sausage and chicken.

But, these were Millennials, so there were veggie burgers, too. Even those got eaten. With that many people, you might want to consider shit like that so they don't turn to cannibalism.

And some ham for the Muslims.

Ah. I know it's a lot of extra work but it's always a good idea to rotate the meat from the top rack down towards the bottom and back up again throughout the cook for a more even finish. Hopefully no one will know any better and you'll still come out as a pit master. :suds:

Ah. I know it's a lot of extra work but it's always a good idea to rotate the meat from the top rack down towards the bottom and back up again throughout the cook for a more even finish. Hopefully no one will know any better and you'll still come out as a pit master. :suds:

I hate opening my smoker once I get it loaded up and set. Next time I may interrupt the cook and wrap the brisket in foil to finish. That might help.

Or not. :D

Use butcher paper instead of foil on the brisket. :thumb:

(I've used both foil and paper and both work but the purists will tell you to use paper. :cool2:)

On the brisket that is a little drier than the rest, just use it for chopped beef sandwiches.

With sauce, nobody will know.


Use the better ones for the sliced beef.

Well, we pulled it off. Lots of fun was had. People loved the brisket and pork. I made way to much. When calculating how many pounds to cook, I didn't take into account that many of the "people" were children.

I slept like a baby last night.

We're giving a bunch of it away. A couple families in the neighborhood who have more mouths to feed than money, coworkers, family members.

We're moving to a new house later this month. Don't need any extra bottles to move with us. I can make more.
