Ah. I know it's a lot of extra work but it's always a good idea to rotate the meat from the top rack down towards the bottom and back up again throughout the cook for a more even finish. Use butcher paper instead of foil on the brisket.I hate opening my smoker once I get it loaded up and set. Next time I may interrupt the cook and wrap the brisket in foil to finish. That might help.

Well, we pulled it off. Lots of fun was had. People loved the brisket and pork. I made way to much. When calculating how many pounds to cook, I didn't take into account that many of the "people" were children.
