Ironically, I learned my Mexican cooking in Montana. The boss was straight out of So Cal, though, and, of course, family origins in Mexico. Does your sis make chili verde? Good chili verde is a truly sublime and transcendent experience.

I’m too lazy to take my tv off the wall
The one i n my bedroom is on a stand and it's amazing how light tvs are now. Isis said since the grandkids are coming though I shouldn't have Evan over. Probably won't take a tv out there if he's not here.

Chili rellenos...now there's another dish the my old boss did exceptionally well. We didn't use batter to dip the stuffed chilis in, we separated an egg, and whipped the whites into a nice stiff froth, very gently folded the whipped white into the yolk, and dipped the chili in that, and very lightly pan-fried them to a golden brown. Suckers were so light, you had to almost weigh them down to keep 'em from floating off the plate! Thinking back on those days now, all I can say is Damn, that place put out some really fine eats...no wonder it was always packed.

I made some bomb ass shells and cheese out of the box. Box said 8-10 minutes but I went all Iron Chef and cooked it for 11 for a little more “al dente”

Tonight I'm making shells and cheese, with slightly over cooked shells and thinned out cheese, with a pound of ground beef, chopped up real fine, mixed in.

I'm probably a week away from eating real food again...

if you add a can of tomato soup you basically have what my wife's family refers to as goulash. it's mighty tasty with a seasoned salt (and i don't mean lawry's seasoned salt which works okay, but the stuff we had was a different mixture that was just so damn good on the stuff.)

I was guessing some kind of Chicken Alfredo! That Cajun Chicken pasta looks GOOD! I used to make Jambalaya on a pretty regular basis back when I was cooking...was one of my more popular specials. Used to make Jambalaya and Crawdads for Monday Nite Football, and used to pack 'em in...The chumps across the street tried to compete with lousy $1 hot dogs, and draft beer. LOL! Love me some Cajun eats!
