He could sell it (it was already estimated at $500,000, and the mystique attached to the jersey being missing would only serve to drive the price up higher), but since the thief was caught with so much Super Bowl memorabilia, it's perhaps more likely he just wanted the items for his personal collection.
I'd say that kind of takes away from it. Even if he kept it for himself, he couldn't show it to anyone for fear that he would be turned in. Or even if they wouldn't, great conversation. "Wow, a Superbowl MVP's jersey, where did you get that?" "I stole it from him while he went to talk to the media!"
