did the rib roast yesterday, todays menu here is french dip sammies w/ leftover rib roast sliced as thin as i can, horseradish sauce on a toasted bun w/ auju' sauce of course.

I roast it whole in the oven.

450 for about 20 minutes to get a brown crust, then drop temp to 285 until meat temp is 120.
