Most of the time if you can't get a smoker to get to temperature or stay lit at all, it has something to do with the coals not getting enough airflow. Some smokers, like my old Brinkman, are designed in such a way that they can actually snuff themselves out. You can drill a few holes in you coal pan and stick a grate in it to keep the coals off the bottom, it also lets the ashes fall through so they don't smother the coals and keeps the air flowing. The Weber has a closed bottom with 3 adjustable dampers that work really really well.

Did some steaks on da grill and had cern on the cob and baked taters with it. Enjoyed it thoroughly.

Bought a can of frijoles charros tonight and dressed them way up with hamburger, onions, tons of cilantro and bathed in sriracha. Shit was good and dirt cheap! :drool:

Last night bottom round sliced paper thin on bread, homemade smashed potatoes and gravy with green beans. Hot roast beef sandwich ftw!

It was. If you don't own a slicer I recommend getting one. Making your own deli meat is the way to go.

I also made some homemade salsa I'll use for various things throughout the week. I wish I had an avocado to blend the salsa into for guac.
