Okay so I'm making dinner (waiting for the pollock to thaw first though) and I'm not quite sure what herbs to use. Feeling adventurous and adapting a recipe I've never used.

Basic gist is: square of foil, place thawed pollock in center, cover with chopped onion, frozen veggies, and herbs of choice. Throw on dab of butter, close up foil, bake.

I'm mixing pink lady apple with my onion (they're already chopped up together in a bowl in my kitchen) and I'm just going to use broccoli and corn as veggies since I have them. So what herbs/spices do I use? I think mint wouldn't be appropriate, but I do have rosemary and thyme...I don't really cook pollock much other, than pan-frying it with honey and chili...

Strange combinatiion, but it's your meal. You'll probably want to take it easy on both, if you want to taste the fish. Pollock is pretty mild, if memory serves.

Hope it's good. Remember, if you're baking in foil, carryover cooking is a factor (it'll keep cooking for several minutes after you take it out of the oven).

It's not exactly dinner time here in the Eastern Time Zone. Gotta get my dogs walked, then turn in, since I have an early day tomorrow. Good luck with the meal.

Mmmm...so Ralph's had its Foster Farms Picnic Packs on super sale today. I got 4.5 lbs of chicken for $3.11!! Turned it all into orange chicken and am enjoying it right now with rice, corn and peas. Yum!
