Grilled Salmon on the Primo.

Medium size filet....

Prep...brush on some EVO on both sides...applied a Williams-Sonoma Mango/chile pepper rub on both sides with a full lime squeezed, let the rubbed filets sit for about 30 mins (not refrigerated...don't want them too cold)

Primo set for direct cooking on half, and deflector plate on the other half....375-400 degs...put the filets on direct heat side for 2 mins ea side to sear... then moved to the indirect side for about 10 mins to cook through. I threw a few Applewood chunk on the fire to enhance the woodfire flavor. Wife made some fresh mango salsa to top them...served with some red beans and rice and spinach...pretty nice meal.

Anyone ever made any smoked pull pork chili?

Smoking a pork butt this weekend(shocker), and was thinking about using the leftovers in the chili in place of normal ground beef.

I see recipes online, but still a little nervous.

Should I eat all the bark pieces or save it for the chili? I love those and sure as hell don't want to waste them, but if they'll take the chili to the next level, that's also cool.

Just seeing this now. How did it go? Sounds amazing.

Really good & easy crock pot recipe.

Cheap beef roast, chuck, whatever
1 can beer
1 can french onion soup
1 can beef broth

Throw in crockpot, let cook 6-7 hours on low

Meat will fall off the bone if you use a boned roast or just easily shred. Put on a ciabatta roll w/swiss cheese, use the juice as a dip..almost like a french dip.

Chili tonight. I usually just find a basic chill recipe online, then add peppers to it. Added a couple serrano and pablano peppers, and soaked 3 habanero peppers during the cook.

Best way to REHEAT meat, fwiw. That's all I've experimented with it tho.
