3) Don't over cook!!!!!! You barely cook salmon (or eat it raw)
Yep only reason I do skin side down 4 min is my ole lady loves when the skin gets crispy

Is there any chance you are cooking it to long first cook? I do one even layer of hot coals, 4 Min skin side down then flip 2 Min flesh side down. Before a package any leftovers I make sure they are completely cool place in tupperware with tight locking lid. When I reheat I do 1 min in microwave. Usually stays moist.
I was describing my experience eating salmon, and not cooking, though maybe early on cooking. I'm not the foody you are so my cooking is simpler. I buy a frozen marinated wild salmon from Costco, then cook it a bit less than the directions call for. I like sushi so I have no fear of undercooked, and my result is always moist and tasty.

No I was curious how the traffic flows on i77N to 81N and if those roads are all open from last years storm

I like sushi also. Reading about expert sushi restaurants I found that the experts freeze sushi overnight before consumption.
In some cases it is the law. Properly frozen sushi will not taste different than fresh, unfrozen.
