I'd prefer the eggs benedict but it's never as good outside of California.
I can make it at home but the Hollendaise sauce is a challenge for me. I know how but can't babysit the stove for long.....

You poach the eggs for eggs benedict. There are a million ways to poach eggs cheating or otherwise.

Frying eggs without breaking is easier in a big (non-stick) pan. More room for the spatula.

A big, THIN, spatula. In a Big NON-stick pan, with butter to be sure nothing sticks.

Preheated before the oil goes in is key. That works well for a seasoned cast iron too and stainless steel.

I've never had it. Had to google it. I would like this recipe!

Incidentally, California version of Eggs Benedict is made with a big slice of tomato or sometimes with asparagus.
California asparagus is only available in the winter. They are bigger and better than the South American asparagus.

Your suggestion gives me another use for fresh spinach. Thanks!
