I'd prefer the eggs benedict but it's never as good outside of California.

You poach the eggs for eggs benedict. There are a million ways to poach eggs cheating or otherwise.
A big, THIN, spatula. In a Big NON-stick pan, with butter to be sure nothing sticks.
Put them in a pregeated pan but cook them slow.
Preheated before the oil goes in is key. That works well for a seasoned cast iron too and stainless steel.

I just got back from NH and brought back plenty if Maple Syrup. Yummmm wrote a poem about the old state today for my dad's bday. He is a publised poet among other things and like when I write, I think he's trying to encourage me but in all honesty I par to sub par at best.
