I’m looking at an electric smoker for pastrami recipe, but will test first in bro-in-law green egg grill. Have the brine solution and original recipe down, and the dry rub before cooking. It is complicated to prepare the meat, 20+ ingredients (spices mainly), brine in fridge for 5-7 days, but definitely worth it. If I buy the electric smoker it would be to deliver freshly cooked real pastrami to local jewish delis.It does depend for sure. I have a base recipe for pretty much all the stuff I have and then may do a little improvising when the basics are done. It usually works out. I do also try new things, like smoking a picnic in a regular Weber grill. I'm not willing to spend the money for a smoker and the horse shoe method seems to work just fine. Took me a couple tries to get it just right for my taste, but once I had it down, it was all good.
I honestly found lots of good tips on youtube and have seen some stuff that just makes me wonder why they spent the money. Some of those people spend stupid money on stuff just to show off how cool they are with their $3000 grill/smoker set up. That stuff doesn't make sense to me as I'm pretty much a cheap skate as I grew up piss poor.

Also have the true NY deli rye-bread down, home made, probably the hardest part. A pastrami sandwich without the right bread can really F up the sandwich.That sounds really good. Too complicated for me to attempt, again that cheap azz thing going on

Have cooked the pastrami in traditional oven, but not the same as smoked.

Pastrami is by far the best of the deli meats......
Padtrami on rye with hot mustard and a thick slice of swiss.....best sandwich around.
Yep you can mask some mediocre deli meats but the bread there is nothing that can hide that.Agree, a good bread can really make a sandwich, a crappy one will ruin it.
