Looking at both of the videos in the link, it appears the holder places some sort of small piece of paper/plastic on the turf before the snap. When the ball is snapped, he places the ball on top of that - apparently, they're using it to steady the ball. After the kick, the holder (quickly but discretely) picks it up.
