Wow, over the course of 20 years, I have done all kinds of cooking...
Fine dining, European style dinner clubs, with lots o' sautees, and sauces; Mexican; Italian; Oriental; and good ol' American cafe food.
nice. I worked in some fine dining, casual dining, and a couple of deli's. It's hard to call what I did in the casual dining "cooking," unless you worked the grill. Everything else was dropped in a fryer with a timer or popped in a microwave.
