so much for these fried eggs sandwiches. How's that for a memory.

I just had to make a permanent diet change myself, but nothing as drastic as you're going to have to do. I just have to keep my carbs/sugar down. Diabetes. I don't know how I'd handle giving up meat/protein.

I'll keep my ears and eyes open for anyone that could recommend some good cookbooks and/or recipes.

I can tell you that if my doctor told me I had to be a vegetarian or my kidneys would shut down, you'd be seeing me in the obituaries pretty quick due to kidney failure.

I'm a huge carnivore myself, but I try to have one vegan day a week. Mushrooms are a savior, not only do they have more of a meaty texture than most of that rabbit food, they also are one of the few things outside meat and cheese that can give you that strong savory umami flavor.

I do a portabella mushroom cap coated with some olive oil, and stuff it with a mixture of whatever stems there were with the mushrooms, already cooked wild rice (I honestly just use Uncle Bens) panko bread crumbs, and I use pine nuts or sunflower seeds from the salad section for some crunch. All mixed with olive oil until it will hold together. Obviously you might have to look around a bit to find something crunchy besides pine nuts. Maybe those flax seeds you mentioned? Just bake the whole thing for like 25 minutes or until it's nice and browned on top. Probably the only vegan thing I eat that I like well enough to share with other people.

I can have a small amount. I can't remember exactly how much though, my blood pressure has to stay low too , that keeps the kidneys from working less. I am on a one time six month steroid regiment and am taking Omega 3 fish oil four or five times a day. Something in my kidney evidently fights another part of the kidney. It's called IGA Nephropathy or Berger's disease. My kidney could go at any time or last quite awhile , no way to tell. I got sent to the kidney specialist, nephrologist and four day later I was getting a biopsy and no subsequently been diagnosed. It's something I can have at least some say in so I just have to buck up and consider it a challenge. What's hard is that I cook for my four or five people on a regular basis and now I have to pull myself out of the equation . Going to even look into soy milk and shit like that.
Any suggestions are appreciated. Thanks.

Black beans are a tasty go-to for a lot of my veggie friends, and they're really versatile. Lentils are also easily subbed for anything that uses ground beef. Quinoa has a decent amount of protein for a grain(like) food and is good in both savory and sweet recipes (for ex instead of oatmeal in the morning).

Whywork - I find allrecipes.com is helpful when I have an ingredient or two in mind but am short on ideas. The site is searchable by ingredient as well as by course or just whatever key words you may have. Pinterest might also be helpful. There are often very specific boards out there you can peruse, and you don't even have to have an account.

I tried the flax milk and don't mind it a bit for cereal and oatmeal. So far I'm taking baby steps and really appreciate al the help. Momma didn't raise me to give up. I had to laugh when I read Neb4Life eat more beef, God I wish I could do just that. So far I have pasta, cerereal, toast with honey or jam, salads.... that type of thing. I'm sort of proud of myself because I knew just hard difficult a challenge it would be. I also have fruits and vegetables. I love rice but much of the processed good tasting rice is loaded with salt so I have to be careful. Salt is pretty easy to overlook and for me that's a mistake. I can eat an occasional egg or small portions of meat or fish but for now I am trying my best to find some things just to expand my menu. So far so good. You don't have to look at far down the street to realize just how lucky you are.

Mixing in a lot of laughter is the best recipe though.

Get yourself a rice cooker, it will be one of your best kitchen gadget investments. Even the completely unprocessed white rice tastes better than the stuff from a box. I use mine all the time for white rice, have tried a couple times for wild rice, but you're right it just doesn't taste as good as Uncle Ben's. I need to keep trying and find a recipe that works.

For better nutrition, try out brown rice. It has a better flavor than plain white rice (IMHO), and it has more nutrients. I second the rice cooker idea. If you eat it more than twice a week, it's a great time and effort saver.

Have you tried almond milk? It's not heavy on protein, and I've heard good reviews on taste from my friends.

I have a rice maker that I have to dig out and start using. I actually didn't mind the flax milk believe it or not. It fine to eat with cereal. I used the regular uncle bens wild rice and just used half of the seasoning so I didn't get as much salt. Appreciate the suggestions.

I tried the flax milk and actually don't have a problem. I have a rice maker that I have to dig out and start using. I appreciate the help. Since I have started I am surprised at how well I have adapted. All the rest is the hard part , it's not an easy thing to go through. SportsHoopla has made it a lot easier for me to cope with it. I've met some real nice folks here.

I was think vegan, but I guess you can eat cheese too, especially a real strong cheese so you don't need much. A simple alfredo or whatever creamy sauce mixed with fresh grated parmesean over some penne or ziti or similar type of pasta. Can almost definitely make it with any of those fake milks. Pan fry some sliced and halved zucchini and summer squash and mix them in. You'd be surprised how similar the texture is to shrimp.

That's half my problem. Plenty of food withoug meat TASTES fine, it just feels to me like it's missing something without that meat. Just adding something in that has a texture similar to meat makes the meal feel somehow more complete. I would guess that will be especially true at the beginning of making a big change like this.

That reminds me - coconut milk (like in the cans, not in the milk section) can work as a substitute for regular milk or cream in some creamy dishes. For example, I use it instead of cream in the two Indian dishes I know how to make (tikka masala and butter chicken). I've also used it in a cream of broccoli soup, and that came out pretty good. Pureed potatoes are also a good way to thicken up soups in place of cream.

If you have Netflix's you may check out a documentary called Forks over Knives. I am not a Vegitarian but yet will go without eating meat unless it's good. It's not a bad documentary, it's basically talks about the benefits of having a plant base diet. They also have a cook book you can order off of Amazon. My wife will make stuff out of there, it's pretty good....i was leery at first by I have found that I can actually taste flavors as oppose to tasting substance, if that makes sense.

For some folks eating heathy is tough, but basically it's just a lifestyle change that doesn't take long to see the benefits.

Also, I'd recommend getting a Vitamix, yes it is an expensive ass blender and there are plenty of others out there but this is amazing. We makes soups and smoothies all the time out of it. If you are needing to alter a heatly lifestyle I recommend a Vitamix.
