It's funny because I can recall one employer making it a big thing to say happy holidays instead of merry Christmas so as to be more inclusive

To be fair the bitching about that isn't about days off. I use happy holidays by default unless I'm sure the person is Christian or won't mind. It's not a burden to use that, and I can see where people that are proudly non-Christian would be a bit annoyed.
