So we got the top 3 guys in the fold already. Signing this fast could mean that they focused on signability rather than ceiling.

No.
Very grouchy indeed. Giants wouldn't draft someone they feel they wouldn't be able to sign. No teams do. It screws up their other picks if they don't sign. Only 2 of the top 316 players last year in the top 10 rounds did not sign (after the 10th round it's a completely different story, but that's because bonuses aren't typically negotiated).
To be honest, most of these deals are worked out before the draft. The little details, the extra few thousands get tossed around after the draft are ironed out, but typically something is agreed upon before the draft. Or else there's very little chance a team would draft a player because they don't think they'll be able to sign him. The Giants would not have taken Corry in the 3rd round if they weren't confident in what his bonus demand was and how that fit into their scheme.
