I always fry onions in butter in the pan, then take them out and put them aside before I add olive oil and throw the steak in. Once I've taken the steak out to rest, I put the onions on top and let the butteryness sink in while I make a beer or wine reduction with the drippings in the pan....my mouth is watering just thinking about it!
