I've been kicking around the ideal of getting an instapot. May have to bite the bullet and try the method you posted.

It's an instapot that I use, but I refer to it as a pressure cooker because it sounds less gay.

I like it. Does some cool things. Reminds me of the sous vide machine I have - they're not the be-all-end-all cooking devices that some folks make them out to be, but they are neat tools to have in your kitchen.

I'm starting to like beef ribs more, they can be a little rich though

I like both, but probably lean towards the beef.

Ever had them at one of those brazilian steak houses like Fogo De Chao? Man, are those good.

Why not just drop them in a camp fire?
May not look very tasty but straight on hot coals works well for a fast sear.

If that doesn't look appetizing, you could do this method:

My grill is hooked up to our natural gas, so it gets hotter than Hades, and it has a "sear station," where they've shoe-horned a burner in between two regularly spaced burners, so there are three burners within an 8-9" wide area.

I've got a charcoal too, but tend to use the gas more for convenience. It's not quite the same, but my gas grill does have a smoker box that I often fill and it does add a smoked/charcoal flavor.

Yep, and I can call up 9 year old Slink Jr from my office and tell him to fire up the grill so it's warmed up and ready when I get home. I don't think I could pull that off with the charcoal.

If he can fire up a gas grill, he can fire up a charcoal chimney and have those coals rolling for ya....
