Never had pan fried trout. Might have to try it. I've always wrapped my trout in aluminum foil with some butter, lemon juice and black pepper and cook them on the grill.

It depends on the water source for cats really. I live in the north GA mountains, the rivers around here are all pretty clean by today's standards. I wouldn't eat a catfish that came out of the Coosa River in Rome, GA though.

Bream, bluegill and crappier are all favorite eating fish of mine as well.

And gar actually has some pretty good meat along the spine, not a lot, but what's there is good.
