I turned a 5 pound boneless leg-o-lamb into a loaf of gyro meat yesterday. It's quite a difficult process, but we love gyro sandwiches with tzatziki. If interested, ask.

We've been happy with the naan bread from Costco: gyro slices, raw onions, a bit of feta, tons of tzatziki, tomato and shredded lettuce: Just like in TheCity.

Tzatziki is the best: great on almost everything.


* yogurt, finely shredded (and squeezed dry) onions and garlic, red wine vinegar, fresh mint and dill.

I do enjoy Greek food, but I'm not a fan of tzatziki. Then again, I'm not really a fan of any yogurt.

It's quite possible I'll be making a big pot of fassolakia (green beans stewed with tomatoes) this week, though.

Did you go straight lamb? I've become partial to a lamb beef combo gyro. Good stuff!

Never tried anything but pure, well trimmed lamb (no fat, no gristle, takes forever). Ground into lamburger, then processed extensively together with onion, garlic, marjoram, rosemary, into a fairly smooth consistency with the chopping blade.

No, I won't.
I've never been a fan of fish or seafood, at least for the most part.
I'd attribute that to growing up in Kentucky at a time there really wasn't much fresh seafood available and being subjected to way too much catfish.

I like Cajun-style catfish with hot hushpuppies (which cannot be re-heated worth shit) made with fresh, wild-caught fish.


I hate all farmed seafood. The creatures live and eat in their own shit, and that's what they taste like when you eat them.

I love hushpupies, but I can't recall ever really seeing them out here. Had I seen them, I would have definitely ordered them.
The catfish I ate growing up was mostly came from my father's fishin' trips to Lake Jericho (some lake in Kentucky ... I just remember the name, and we got off the highway at exit 28, although I can't remember which highway).

It is said that at the base of the Falls of the Ohio, where the locks are, the catfish just wait at the bottom, eat whatever comes over, and grow to be the size of VW bugs. I don't know if that's true, or just a sort of legend of the city.

I like lizards, for a variety of reasons, one of them being the way they control some of the bugs. None of the ones around my house are nearly as interesting looking as that one is, though.

I know that "channel catfish" can grow to 200-300 pounds.

Maybe what they say about the Falls catfish is true, then.

It's warm enough today some of the fence lizards around my house are out basking in the sun. :)

I use sherry to flavor the mushrooms and deglaze the skillet, then reduce a mixture of sherry and stock to flavor the custard ... sooooo good.
