Good servers could be paid a higher wage.....just like the way it works in normal life.Like I said, that punishes the good servers. You will pay more for your food/drinks and can be 100% sure you wont get great service.

Not at all. That money is most likely not reported to the IRS as income, it doesn't help the place to generate income. It might help sales for what he/she does to get that kind of money.I have worked with some really great servers that make $600-$800 on a decent Saturday night between 4pm and 9pm. They would have to be paid about $140/hr to equal. Need I say more?

That is my point about a non tipping restaurant ..is it not? Let them make a regular wage and not beg for tips. Everyone wins but the servers who get more for acting like whores.
Yeah, I think commission is just like tips or being self. You have to keep your game face on if you want to keep your numbers up when providing à service. Im à general contractor and I feel like actor quite à bit too, and I think my expérience of working for tips has sharpened that skill of just being able to turn the politeness on with customers on que.

For posting the lack of a tip. There is nothing in question about that whatsoever.

Posting bitching that someone didn't tip you makes your restaurant look awful. Instant termination.
The GM should be the one doing that. He/she should walk the entire floor and apologize to everyone who was forced to wait an unreasonable amount of time to be seated. That's what a good GM does. Ultimately it's his responsibility to assure excellent service. Servers are an extension of that.
Being a GM i work on salary and bonus on bottom line. But yor right in that to be succesfull need to be nice to every because repeat business is so important. They could love the salesman, me etc but then the Service mgr is on the rag and pisses them off and they are gone. We generally bend over backwards even if not covered under warranty because have to think long term. With the internet today, reviews are so crucial. You do something good for someone , they will tell 10 people, do something bad and they tell 100
