If you flip the coaches of those two teams, Seattle misses the POs and Denver goes 19-0.

Denver made it to the SB despite having Fox as a coach, not because of it.

True as that may be up until this year, that wasn't expected of him, even prior to the announcement.

I think a large part of it stems from his size. He's a DE at Missouri, but his size is (most likely) going to require him to convert to LB in the NFL. He's kind of in a defensive purgatory. At 6'2" 255 he's too light to be a DE but too heavy to be an LB. I'd expect that the hope is he can get down to the 245 range, which would still make him heavier than guys like Luke Kuechly and Sean Lee but still in an acceptable range like NaVorro Bowman or Ray Lewis. Plenty of precedent that a slightly large guy can be a top-tier linebacker if the skills and brain are right (Brian Urlacher comes to mind).

Anyhow, long story short, unless someone is just a freakishly unreal athlete, their draft stock will almost always drop if there's a belief that they need to change positions for the NFL. Part of that is that you don't know how they'll react - they could be a total bust - and the fact that they generally are not regarded as NFL ready right out of the gates like a college LB would be.
