Afternoon Riot, Misk, MS.

Cold, rainy day here. Glad I finished raking the yard this morning before wrok. It ain't gonna dry out for a couple of days. And I'm leaving tomorrow for Thanksgiving in the Burgh, so it wouldn't have gotten done 'til the weekend.

Sounds good. Y'know, there's another holiday delicacy where we come from, that I don't often see around here...nut rolls. How can ya have a civilized Christmas w/out nut rolls?

Then I would substitute a light veg oil, or some Crisco shortening, for half the butter. The oil raises the burning point of the butter without adding the nasty-assed flavor of margarine.

On the other hand, if ya can't actually taste the margarine in this recipe, then I s'pose there's no point in changing it. Hell, it's your family recipe, so who am I to screw around with it. LOL.

trust me they taste great.. you dont taste the margarine.. it helps bind the ingredients together ,,and self grease the irons.. oil would make them soggy and greasy tasting

I see your point. And truth be told, I don't make pizelles. I buy 'em. Orlando (a big commercial baking outfit out of Cleveland, originally owned by an Italian family) makes a surprisingly good one.

And there's an Eastern European baking outfit called Reineker's, located somewhere in Ohio, that makes a decent nut roll (my local IGA carries their baked goods...they're expensive, but worth it when I want a real treat).

I wish there was some place here that I could buy the nut rolls up here .. Im going to have to break down and try my hand at making them

I use a pizzelle iron .. now the wife makes the Norwegian krunkakas that get rolled and stuffed but the batter for those is thinner and a differant iron the groves arnt as thick
