Short of somehow acquiring Mauer and keeping him healthy, they can't. Posey's the best catcher in the National League for sure, and he might overtake Mauer within a few years for the MLB crown. Posey's practically impossible to replace.

Additionally, I don't know how the Giants can even replace his bat in the lineup without losing value, since catchers are so rarely good hitters. This could really bury them, which is unfortunate, since they have such a great pitching staff.
