Wings are ALWAYS amazing when you "pre-cook" them in a way...either sous vide or poach in a flavorful broth and then fry them...
I like to steam em' fer bit, then bake or fry.

BTW, do you steam them with water? broth? or water with some seasonings in it?(kinda like a court bouillon)? I'd likely do the last one...
Bay leaf, peppercorns, anything flavorful that you like...
I'm a traditionalist with wings, so I don't impart much on em. I've done em' with broth and water both.
I think bay and pepper would be awesome tho...might have to try that,
