I thought about Lost as well in regards to this and it's funny the amount of disbelief one had to suspend for Lost to make any kind of sense much less worry about why the Polar Bear was there.

I saw a pretty good explanation from someone about this in a discussion elsewhere. The Iron Islands didn't declare independence because they likely can't survive independently. The wars over the course of the show basically wrecked the Iron Fleet and of course Euron fucked a lot of shit up too. Basically, its more financially viable for them to stay in the Kingdom and get the benefits and resources than it is to try to make a go of it alone.
As for Dorne? Eh. Who really cares. It's Dorne. The show never did anything with them and all we even know is they have a nameless Prince as leader. Would we really want time spent talking about Dornish independence from people we never really spent much time with at all? If there had to be a reason I guess you could maybe claim that since the Lannisters basically died out (with the exception of Tyrion) as well as there being no more Targs, Dorne no longer had such a big beef anymore so they were willing to give this new order a shot.
LOST painted itself into a corner by blatantly lying to its viewers. "No, it's not Purgatory!" they told fans early on. Several style-but-no-substance episodes later, in the finale, the big reveal is yeah, it's been Purgatory all along. About the only worse way to treat your fans is the St. Elsewhere / Life on Mars ending, where the show admits that everything you just saw was a fake plot line in the mind of an autistic / computer.

If the character of Arya, for example, was revealed to be a cyborg or a ghost, at least she still participated in the story. And even then it was only through marriage not conquest.Sure, but Dorne especially would not stick around. It took the 7 kingdoms 100 years longer to get Dorne to submit. They sat out basically all of these wars, so they had full strength military at that point, and they hate the Lanisters most of all and they watched one be made Hand of the king again.
It took 3 dragons to get them to submit in the first place, noway the depleted kingdom with 0 of them can do it.
