Just made a beer braised brisket with Sweet Baby Rays BBQ sauce and Sierra Nevada Porter in a slow cooker today. It got me thinking of what other recipes you guys have thrown together with your favorite beer. I know I've used amber and brown ales with my chili and a couple sauces cooked down with beer.

If you've got a good one, let us know.

I typically start this recipe first thing in the morning and by mid-afternoon I have my first bowl. Great for gamedays.

- Brown 3 lbs of meat. I typically use 2 lbs of ground sirloin and 1 lb of ground sausage. I may also chop up some kielbasa.

- Transfer the meat to a slow cooker and add a bottle of amber or brown ale (porter may be something I'll try next) and allow to cook for several hours.

Add:

- 3 green bell peppers
- 1 large yellow onion
- 1 large can of Rotelle (or store brand) diced tomatoes with green chilis
- 1 large can of regular diced tomatoes
- 1 pack of chili seasoning or your own spices. I have my favorites that I'll add, but a store bought pack can work in a pinch.
- Hot peppers. I get mine from a friend that grows and cans his own. I don't know the exact pepper, but I've had some people say it's really hot with just one pepper, while I normally add 4 for my own tastes.

Stir and let cook for a couple hours on low.

Add:

- 1 cup of brown sugar
- another pack of seasoning or other spices to taste.

Let cook for a couple hours and then dig in with some shredded cheddar cheese on top. I find that the brown sugar and sweetness from the beer help offset the heat and allowing the heat to come on at the end of a bite.

Open beer.
Pour into glass.
Enjoy

Prep time: about 10 seconds
Consumption: 20-30 minutes

1 whole onion

Bring that to a boil and add 10 brats. Boil for 10 minutes and remove the brats and onions. Place the brats and onions on a hot grill and cook evenly on both sides until crispy. Throw some cheese curds on the side and enjoy.

1 chicken (3-4 lbs)
2 tablespoons BBQ rub.



BBQ rub

1/4 cup brown sugar
1/4 cup sweet paprika
3 Tablespoons black pepper
3 Tablespoons coarse salt
1 Tablespoon of hickory smoked salt ( you can just use more coarse salt)
2 Teaspoons garlic powder
2 Teaspoons onion powder
2 Teaspoons celery seed
1 Teaspoon cayenne pepper

Mix all ingredients in a bowl and store in an airtight container. This is a great rub and I use it on chicken, pork, and beef.

Beer Butt Chicken, Drunken Chicken, Beer can chicken, ....

Pop the top on the beer and drink half of it. Then, using a church-key style can opener poke a few more holes in the top of the can.
Rub the chicken all over the outside with the rub and sprinkle 2 teaspoons of rub inside the body and neck cavities.
Pour 2 teaspoons of the rub into the beer.

Shove the beer up the chicken's ass and tuck the wings behind the back.

grill over indirect heat @ 300-325 for an hour and a half. The skin should be dark golden brown and very crispy. Internal temp should be 180.

Crock pot brats

Couple packs of brats
Enough beer to cover brats
Green, orange, red or yellow peppers--I usually do a combo of 3
Large onion
Bay leaf
2 cloves garlic
3/4 cup Honey Mustard or your favorite BBQ sauce. I've tried both, they're equally good.
Cook in crock pot for 6-7 hours
Brown on grill before serving
Add peppers and onions and condiments.

i will vouch for this ^ damn tasty. Don't think i used miller lite though, cant remember what i used

Miller Lite does work well in this recipe. Probably any adjunct lager would work, but I like Lite for this and haven't deviated since I found that I liked this recipe. Probably do this 20-30 times over the summer.

WTH's a cheese curd?

They are squeeky little hunks of cheese. Basically they are leftover cheese after they churn the cream into cheese. At least that is what I want to think they are. Never heard of them before moving to Wisconsin.

so they come fried and unfried? And you're saying fried is the shit. I like fried and chicken fried, so this is sounding better all the time.

They are also essential in the making of poutine, which is outstanding stuff.

You buy them unfried, then batter and deep fry them...Every fair and carnival around here has them. I'm pretty surprised they're not common everywhere. I just assumed they were.
