Why do they grow carrots on landing slope of the ski jump hill?

Carrots grow thin but strong roots that hold the ground together. Ski jumpers hit the ground with a lot of velocity and force, if the soil is "loose" the Jumper could "sink" leading to a catastrophic injury. They do the same thing on triple jump courses in the summer games.
