Ribs?I did 2 hours @ 350. I just got done with my steaks, heard the band playing and ran in. Guess I missed the A&M TD.
They were pulling off the bone. Tried one before the steaks, pretty damn good if I say so myself. Maybe next time I'll work on my own rub instead of store bought.

I do 2 hours in the oven @ 300 with a rub, then put on sauce and finish on the grill for 10-15 minutes until they get a little charred.
I'm not originally from NY btw... Chicago does ribs well, cause so many black people from the Mississippi Delta moved up in the 1920s-30s.
No grill here in London though (they're illegal in the city even if you've got a patio), so stick to pork shoulders in the oven for 6-8 hours. I make my own sauce (NC-style vinegar based) because British BBQ sauce is too sweet for pulled pork.
