I did 2 hours @ 350. I just got done with my steaks, heard the band playing and ran in. Guess I missed the A&M TD.

They were pulling off the bone. Tried one before the steaks, pretty damn good if I say so myself. Maybe next time I'll work on my own rub instead of store bought.

Ribs?

I do 2 hours in the oven @ 300 with a rub, then put on sauce and finish on the grill for 10-15 minutes until they get a little charred.

I'm not originally from NY btw... Chicago does ribs well, cause so many black people from the Mississippi Delta moved up in the 1920s-30s.

No grill here in London though (they're illegal in the city even if you've got a patio), so stick to pork shoulders in the oven for 6-8 hours. I make my own sauce (NC-style vinegar based) because British BBQ sauce is too sweet for pulled pork.

Grills are illegal in London? Never moving there

Also, if you're interested in sharing that sauce recipe I'd love to try it. NC barbecue is the one kind I haven't managed to try, although I've tried Georgia, Louisiana and Texas already, as well as some "expats" around Florida.
