Wish I liked coconut because that looks great! Any issues with the kale not being tender? I used to always have problems with kale before I learned you have to cook the shit out of it to get it good and tender. Not always though.
No didn't have any issues in that regard, really. It cooked down really well. I probably let it all simmer for a good 10 minutes or so, so that might be why. You don't have to use coconut water, either. Regular old milk works just fine - just something to mix with the curry paste to start a good sauce.

Oh, hell yes. What's the marinade?

2 tablespoons chopped fresh ginger
4 cloves garlic chopped
1 bunch of scallions chopped fine
3/4 cup Soy
3/4 cup sake or dry sherry ( I used sake)
1/2 cup sesame oil
1 tablespoon sugar
1/3 teaspoon black pepper


After you take the lamb out of the marinade, pour it in a sauce pan and add 3 tablespoons butter and a tablespoon of sugar. Boil it until it gets thick and syrupy. Use this glaze to baste the meat during the last 5 minutes or so.
