This is a pork loin I stuffed with sweet peppers, onions, garlic and Cajun seasonings. Smoked it with hickory and pecan.

Oh damn, that looks perfect. I've not done a stuffed loin but I'm going to have to add that to the to-do list. I did the meatloaf with hickory and mesquite. What kind of smoker do you have?

I have a Weber Smokey Mountain Smoker, but I hardly use it. Instead I usually just use my Weber Kettle. Just bank the coals on one side and place the food on "indirect heat" side to cook.

I have a Weber Smokey Mountain Smoker, but I hardly use it. Instead I usually just use my Weber Kettle. Just bank the coals on one side and place the food on "indirect heat" side to cook.

Weber kettle is all you need.

Weber kettle is all you need.

I have been using them for over 30 years now. For the money. you simply can't buy a better cooker....and even if you spend more, you won't have a better cooker.

I currently have 3 Kettles and the Smokey Mountain Smoker.

Unless I'm having to cook for a lot of people and doing a few racks of ribs along with either stuffed loins or Boston Butts for pulled pork, I just use the Kettle.

Is it difficult to control the temp though?


Open the vent on the lid fully open. Open the bottom vent the width of a number 2 pencil. Pile unlit charcoal to one side of kettle. Light a half chimney of coals using paper towels drizzled with cooking oil....not alot....doesn't take much. The paper towels burn clean, unlike using paper which doesn't burn completely and then you have to deal with all that black shit floating all around...

When you place your meat in the cooker add a pan of water. Some folks think the water adds moisture to the meat....but it really doesn't do that. What it does do is help maintain a constant temperature inside the cooker. You can also use sand or ceramic briquettes from a gas cooker for this.

Once you dial in the temp.....using the bottom vent only!!...leave the top one fully open....it will maintain the temp as long as you have fuel.

Met a husband and wife at the grocery store all decked out in LSU gear.

Told him I'd not wish him luck, but hoped for a good game. :D

Confused others with my UNA cap, which has the same colors as LSU.
