i see you found your answer. It probably was the whole wheat flour and extra egg. "Baking" is a science and if you screw with the ingredients and vary too much from the ingredient list you mess up what is supposed to happen. so in your case you need to find a recipe that has what you want.Whole Wheat Pancakes (that actually taste good) Fifteen Spatulas
worked great.........used cider vinegar, less baking powder and soda, fluffy, tasty...........
put a lil extra egg in......
used a muscle milk shake for some extra protein, life is good

Mix the drys, add yolks-n-wets and whip up them egg whites til stiff...fold that in w/ the rest. Pour, brown and enjoy w/ real maple syrup.
too lazy to make from scratch I use instant mix but like to add blueberries

I'm sure they r, I'mWheat germ and cottage cheese pancakes are amazing. My grandma made them for me for years and my bro got the recipe and started making them a few years ago. I've made them a couple times. Truly amazing unique pancake recipe.
