This question is for those who attend games. Often a pre kickoff event might not be shown on the TV as they usually are in commercial mode just before kickoff.
I will start by telling what we in Seattle get exposed to just before the opening KO.
Just before team introductions (usually 11 players on the starting D or O) as the players prepare to enter the field through a screen of fog, noise, and fire, an Osprey will take a solo, untethered flight from the tunnel to her handler which is as cool to witness as can be. It is probably a 50 yard flight. Her name is Taima and when she takes flight she always soars just inches above the play field before she steers herself up to her handlers gloved hand.

I'm pretty sure I heard somewhere that she is an Auger Hawk, quite similar to an Osprey which is aka a Seahawk.
Right after that the 12th Man flag is raised usually by a local famous athlete or celebrity. It is always a big moment at The Clink and fans are always wondering who is going to raise the flag this week? For our 1st trip to a Super Bowl in 2005, Mr Allen raised the flag as all of the Hawk fans in attendance were awed by his display of fandom. A moment I will always remember.
I am curious what other stadiums around the league do for their moment just before kickoff.
