I start by throwing them in the trash, and replacing it with a real potato.

Really depends on my mood. Sometimes I'll bake them with just butter and salt. The next step would be for me to add some cinnamon and maybe a little nutmeg. Sometimes a little brown sugar for extra carmelization. If you want to kinda jazz things up a bit, instead of cinnamon and nutmeg, you could add some chili powder, cayenne, whatever you like to give it a little zip. That sweet/heat balance can be really nice...

For me, special occasions like holidays then I go with the sweet stuff but just to eat on a random night its butter and salt.

Sweet potato soufflé is my favorite way to eat them but I hate making it so I rarely get to enjoy it.

Slice them down to fry size, put them in a bowl with some olive oil and Johnny's and toss. Then bake at 425 till somewhat crispy.

Or leave them whole and bake.

My wife does some twice baked sweet taters with brown sugar, butter, etc. for anyone with a sweet tooth.

for real? i love them
I like them every kind of way..... If you love them, I recommend going to a farmers market or find some one who sells them in the fall and buy a bushel or more. If you buy a bushel they are about 1/3 of a grocery store price and you can store them for up to a year in a dry room. They will cure over time and as the moisture evaporates the natural sugars will become more pronounced the longer they cure. I usually sell 2000+ bushels labor day-thanksgiving and every year people tell me they only have 1 or 2 left from the previous year. My unasked :2cents:
