If you want to count Buffalo in the "Western NY" mix, there's buffalo wings, beef on weck (roast beef on kummelweck roll), sponge candy, etc. I remember talking to some people at Woodstock '99 and was surprised they didn't know what white (pork) hots, spiedies, salt potatoes, or garbage plates were lol.
White hots and custard are the only things I remember from Rochester.

Syracuse is about an hour and a half east, Buffalo about an hour west.
