2. Never rub your eye after cutting Jalapenos into slices, it does in fact burn. Had to flush both eyes for a good 5 minutes before the pain subsided.

As a follow up to Pickling Jalapenos
they turned out to be the best I have made
used less sugar with this batch
and the tomatillo /jalapeno & spices salsa verde I made was epic

Aside from wearing gloves for protection from pepper oils Nickle...what is your recipe for pickling your peppers? Same as other vegetables?

I am curious.

Really easy way is to just slice up some jalapenos and put them in the brine from a used jar or can of jalapenos. I like to slice up some carrots and garlic cloves to throw in there. Not exactly pure pickling, I suppose, but it is very easy and delicious.

I am curious.

1 1/2 cup of vinegar
1/4 cup of sugar

bring that to a simmer

add 10 jalapenos sliced as thick as you want into the pot

turn the heat off
leave them on the stove to steep for a few hours until they have cooled down
put them in a jar
let em set up over night then eat

you will never buy another jar of jalapenos from a store if you follow this recipe

The original recipe called for carrots but I have never liked that

made another batch on Monday and they are just good man, they start sweet from the sugar then POW the heat from the seeds kick in.
Not an over powering heat just mind numbingly addictive

Last batch was hot
had about 24 jalapenos
used a full bottle of vinegar and 3/4 cups of sugar
the sweet was still there a little bit but the heat is more prevalent

made 2 Strawberry pies today for people from church
for the filling
5 cups of Strawberries
3 tbs of corn starch
1 tbs of powdered sugar
1/2 cup of sugar
pinch of salt
stir all of that in a bowl

place filling into pie crust
25 minutes at 375
30 minutes at 325

And for the love of everything holy don't take a leak without thoroughly washing your hands first. I did that once. ONCE.

Also, when I'm gutting jalepenos I'll wear rubber gloves and safety glasses. Every single time I don't, I end up with a little jalepeno juice landing in my eye. What's your first response when something goes in your eye? You rub it. Afternoon ruined.

Extra strength Gold Bond powder in the blue bottle! It is the answer to such a horrible mistake. A gun to the junk seems like the answer but just remember.........the blue bottle!

Gonna try pickling jalapenos this weekend. Doing a pork shoulder, some bacon japs, and gonna pickle some too. Got the family coming over for fathers day and I get to feed em all.


Chicks say cooking for the family sucks, but guys love it cause it gives us a reason to fire up the smoker. And, since it is my house, I can smoke things the right way...fire it up and think drink beers while watching the temp to make sure it holds (on a gas smoker :pound:). Can't wait!

Just put my jalepenos in a jar and in the fridge. Gonna find out if GN is full of it or not :happy:

I had some big jalepenos, so only could put about 6 of em in there. Even with that, they aren't all fully submerged in the jar.
