Been wanting to make beef wellington for quite some time. Looks incredible. At my wedding a lot of stuff I didn’t care about, but I made damn sure I had beef wellington.
It turned out pretty good. Had a little bit of a soggy bottom, but not bad. Also went with a recipe that used a duxelles instead of a liver pate.
