Fried Egg & Smoked Salmon Breakfast Sandwich

Breakfast Sandwich with Fried Eggs and Smoked Salmon
Recipe type: Breakfast
Prep time: 10 mins Total time: 10 mins
Serves: 2

A simple breakfast that is a great way to start the day. A winning combination. Can’t go wrong with smoked salmon, eggs, pesto, and cucumber.
Ingredients
4 slices bread (gluten free bread for gluten free version)
2-4 tablespoons pesto (vegan pesto for dairy free version)
several slices smoked salmon
1 small cucumber, thinly sliced
2 fried eggs
handful salad mix
½ avocado, thinly sliced (optional)

Instructions
Spread pesto on each slice of bread. On two pieces of bread layer salad mix, cucumber, smoked salmon, avocado and one fried egg on each. Top with other two slices of bread.
Makes 2 sandwiches

Banana Bacon
No instructions really. Just wrap some bacon around the banana slices and throw em on the grill. Pretty darn good. :drool:

So here in OKC we pretty much aren't close to any kind of fresh shellfish. Let alone that's affordable. So when the wife and I went to Boston, I think I had lobster at every meal. Specifically, Lobster Rolls....wow. Miss those bad boys. If I tried to make something like that here it would cost me $30.00 bucks!

When we visited Savannah GA a couple of years ago I had fresh seafood for every meal. Clams, crabs, shrimp, oysters, fish. Man it was amazing.

^^^ looks good. I'm not really into BBQ sauce but when it's cooked on, I can deal with it. It's not as sweet and nasty for some reason.
