Definition of DEFENSE

According to Webster it is not a verb in any way. And frankly I cannot remember it being used as a verb until Aikman and Buck got into the FOX commentating booth.

BTW, defence is the UK English spelling, defense is the US English spelling for the word (similar to colour vs color). And also in the UK, defence is strictly a noun, and the associated verb is to defend.
