So why play him in center? Doesn't DeAza have experience in center? I know Parker was drafted as a CF (in the second round after Brown, BTW), but if he if Burrell/Morse out there, hide him in left.

He's more Fred Lewis than Burrell/Morse. He covers ground, but doesn't take good routes, slow to release the ball. Maybe DeAza doesn't feel right in CF right now, or Parker doesn't feel right in LF.
